About the Chef
Chef Matt Olley built his culinary career in multiple avenues of the industry. Training in restaurants in Brooklyn, Queens and NYC, as well as assisting with the best food stylists in the biz with big named brands and publications. Chef Matt decided to take the leap and start his own company The Little Viking Co, a produce only fast food concept that hit the Capital Region 2021. He soon moved into catering and private dining working for Lily & the Rose and Meadowlark. Matt is Curently the head chef at the newly revamped The Daisy in Cohoes NY.
